PREPARATION AND EVALUATION OF
F'UNCTIONAL FOODS CONTAINING PREBIOTICS
AND Succharomyces boulardii FOR COMBATING
DIABETES COMPLICATIONS IN RATS
Probiotic, prebiotic, diabetes, high fat diet, streptozotocin and
functional foods
The current study was planned to evaluate the hypoglycemic' hypolipidemic and antioxidant ictivities of some plants rich in prebiotic 1"t i"ory leaves, jerusalem artichoke, artichoke, psyllium seeds' barley' iui, f""gteet'and locust bean) and two prepared type-of symbiotic cheeses (fust type was inoculaied with Saccharomyces boulardii a.,d ,,rppt"*"t ted wittr 3Yo barley in powder form and the second type was inoculated with Lactobacitius gasseri and supplemented with 37o jerusalem artichoke in powder rorm; as.a functional foods in rats fed 'hrgh fat-high cholesterol diet then injected with low- dose of st"eptorotoclin to induce diabetes. h the first experiment of the present study the hypoglycemic, hypolipidemic and antioxidant activities of the aforesaid items were .ru"*tia in diabetic rats fed on basal diet containing the aforesaid items each separately. Blood glucose, lipid profile, [iAn"y. and liver functions as well as internal antioxidant i-y-". activities were assayed. Also the histopathological changes of heart, liver, pancreas and Lidney tissues of different experimental ;;d. *"r" .r,u*ined. In the second experiment of the.present study it" tvpogry"emic, hlpolipidemic and antioxidant activities of chicory t"urr"r, p.yili.rm seeds, oai and fenugreek were evaluated in diabetic rats fed onfrilfr fut diet containing207ofeach plant separately.-Results of the first elxperiment disclosed that all the studied items caused reduction in blood g1,r"o.", total cholesterol, LDL-C and triglycerides in addition to the improvement in kidneys and liver functions and the internal antioxidant enzymes activities. All the studied items retard the histopathologicai changes of heart, liver, pancreas and kidney tissues' Results of the second e-xperiment disclosed that chicory leaves, psyllium seeds, oat and fenugre"i showed protective effect against the high fatdiet in diabetic rats". Results revealed that all studied plants rich in pr"uioti" as well as the two prepared qpe of sYmbiotic cheese showed promising effect towards diabetes and its complications
